DAIRY PRODUCTS are very nutritious, healthy and useful for mankind. Cheese is one of the most common dairy products produced throughout the world. It is a traditional food with prehistoric origins. Cheese, like dairy products is made from pressed milk curds. Different varieties of cheese are made from un-ripened (fresh) cheese or ripened (aged) cheese. Cheese is a delicious and nutritious food has a very versatile use. We can use it into other dishes or eat it by itself. Cheese is very convenient and portable. There are about 900 varieties of cheese are available including cheddar, mozzarella and colby many of which are available in various flavors, forms (chunks, shredded, slices, sticks, grated, cubes, spreads , crumbled) and packages to meet consumers needs. It is nutritionally rich in protein, calcium, zinc, phosphorus, vitamin A and vitamin B12. Calcium is one of the most important nutrients most likely to be lacking in our diet. According to most recent statistics observations, nine out of 10 women and six out of 10 men fall short of calcium recommendations. Cheese contains high-quality protein that provides the body with essential building blocks for strong muscles.


If we are lactose intolerant, many varieties of cheese particularly aged cheeses such as Cheddar and Swiss, contain little or no lactose contents and are often well tolerated by us. In ancient times ago, saturated fat found in cheese, meats, butter, eggs, lard, whole milk, and some oils was considered a primary cause of heart disease. Now a day, new research is showing that saturated fat has a minimal impact on heart disease risk, which is changing the saturated fat is bad paradigm and allowing people to enjoy more cheese and other favorite foods. Even if saturated fat is less of a concern then calories still matter. To reduce calories, we can grate or sprinkle harder cheeses over dishes or use small amounts of aromatic and sharp cheeses for their delicious cheese flavor. The digestibility of goat milk is more than other bovine milk. Goat milk has unique composition and nutrition value due to release of protein fragments during digestion and food processing. Its proteins are rich source of antimicrobial peptides and agents taking role in bio- preservative property to control the growth of pathogens in food material. Goat milk is contributing a handsome amount for sustainable development due to its increasing market demand. Its products can provide producers with a good farm revenue and economic viability. The first and the fore most one is home consumption. This demand is increasing because of the growing human population. The old saying, “goat are the poor mans cow” is quite fitting. The second aspect is the enthusiast interest in goat milk products, especially cheeses and yoghurt in many developed countries.


The cheese made from goat milk has a great medicinal importance as it contains highly digestible fat and protein contents. Goat milk also has a buffering quality that makes it useful in the treatment of ulcer and the patients suffered from microbial infection. Cheese made from goat milk cheese contains less lactose than cows milk cheese, and contains smaller fat globules, which make the cheese easier to digest. Goat milk cheese contains low fat and cholesterol level which cause different types of heart diseases. Substituting goat milk cheese can help you limit your intake of fat, saturated fat and cholesterol. Goat cheese contains just 5 g of fat per oz. serving, while cheddar cheese contains 9 g. Similarly goat milk cheese contains half the saturated fat with 3 g per serving, as compared to the 6 g of cheddar cheese from cows milk. Cheddar cheese contains 25 mg of cholesterol per serving, while goat cheese contains none. High level of cholesterol causes heart diseases in early age.


Pakistan is a developing country as well as the livestock production in Pakistan is the second biggest economic activity after crop husbandry for rural population. There are about 137 million people in the country, more than 92 million (67%) live in the rural areas. There is not giving proper care and attention to rural livestock kept in the villages and remote areas, thats why dreams of uplifting the socio-economic conditions of the rural areas cannot come true and the expected increase in this sector cannot be envisaged. To develop the livestock sector as a whole, we have to pay attention on our live stock dairy animals and the needs of the small landholders and landless livestock owners are to be met on time.


As we know that Asia produces about 80% of total goat milk. Pakistan at present running 56.7 million heads of goats of different varieties consisting of about 25 well recognized breeds found in different regions of the country. Goats annually supply around 275 thousand tons of meat, 851 thousand tons of milk to the economy of Pakistan. They are also a source of foreign exchange and supply about 2.5 % of the annual milk production. In Pakistan mass of goats are kept for mutton production, some for milk purpose. Typical milk producing breeds of goats are Naachi, Beetal, Dera Din Panah (DDP), Kamori and Damani. These dairy goats constitute about 5 million of the total goat population in the country. Usually small flocks of goats are raised together in plains and sub hilly areas of Pakistan. Major feed resources available for goats are mainly ranges (60%), while other feeding material available to these animals is along canal/river banks, pastures, tree leaves, crop residues, roadside grazing, pods and household remains etc.


If we use goat milk for processing then different types of products can be made from goat milk. The most beneficial and nutritious product is soft un-ripened cheese from goat milk, which can be made easily at home for domestic purposes. Cheese can be used in different food products like pizza, shawarma, burgers, breads, soups, cheese buns, cheese fries, cheese toasts, cheese puddings, cheese role, and cheese sandwich etc. All of these are fast food products and mostly according to the new trends of Pakistan. The goat milk should be used for cheese making purpose which will be very nutritious and healthy. It should improve the immunity against different common diseases and called as balanced diet. Some people dislike using raw goat milk, so value added goat milk dairy products are used. The cheese prepared from goat milk is value added nutritious products, which is economically beneficial. We should increase the goat milk production and used it for value added cheese products. It will be very beneficial for our health and economy.
